Fruit cake350g (12 oz) self-raising flour10ml (2 level teaspoons) mixed spicePinch of salt175g (6oz) margarine175g (6oz) soft brown sugar2 eggs, beaten225g (8oz) mixed dried fruitMilk to mixSlow oven (160° C, 325° F, Gas no 3)Greased 7 inch cake tin (20 cm)Sieve flour, salt and spice into a bowl and rub in the fat.Stir in the sugar and fruit.Mix in the eggs and milk and mix to a fairly stiff consistency.Place in tin and cook for about 1 hour 30 minutes.
